2022 Sidesaddle Sauvignon Blanc
Hand-picked fruit from two sites on the Estate that were selected to provide different styles to add to complexity. Fermented at low temperature in stainless steel to retain freshness.
A well-integrated balance of the tropics to the herbaceous. Initial notes of lychee, pineapple and lemon zest are followed by freshly cut grass and green capsicum. An aromatic, juicy and energetic wine.

Vineyard Notes
Sally’s Folly Sauvignon Blanc was established in 1997 by the Cook family. Planted with the F4V6 clone this 3-hectare block enjoys a northerly aspect, it was a labour of love for Sally in the early days. At 375 to 390 metres altitude, this vineyard is in the ideal position to grow well balanced Sauvignon Blanc grapes. The soil structure consists of sandy loam over clay with the presence of some bluestone shale.
Winemaker Notes
Handpicked on the 13th of March this 2021 vintage Sauvignon Blanc maintained high acidity while ripening. This meant that we had to allow it to ripen further to develop the perfect acid to sweetness ratio. Handpicked early in the morning to keep the fruit cool prior to ferment has allowed this wine to show great complexity and maintain a clean clear appearance. After whole bunch pressing, specially selected yeasts were added to begin fermentation until the wine became dry. The wine was then stabilised prior to being bottled on the 20th of June.
